What's the big deal about yogurt?

Yogurt was one of the first foods to be termed a "health food" in this country. During the health food movement that blossomed at the end of the 1800's and early 1900's yogurt was known as a life giving tonic and aide to over-all health. Due in large part to sutdies done by Russian biologists, Bulgarian yogurt in particular was shown to greatly contribute to the health and longevity of the inhabitants of this region. To this day, that region has one of the highest percentages of centenarians on the planet. Around the world yogurt is a part of many traditional diets and is eaten with most meals.

Yogurt is a member of a class of food termed "super foods." Yogurt, cheese, buttermilk, kefir, bread, tempeh, shoyu, pickled foods and wine are all examples of foods that are the result of microbial or enzyme (yeast, bacteria, fungus, etc.) action on common foods. This action transforms them into nutritional powerhouses by breaking down and altering certain food molecules into a more useable form. This allows for easier digestion of food and an increased level of nutrient absorption. For example, many people cannot eat milk products in part due to an inability to properly digest lactose, the naturally occurring form of sugar found in milk. The bacteria in yogurt convert the lactose to lactic acid, which is mch easier to digest. The bacteria consumed from eating yogurt will also assist in the digestion of oterh foods and help the immune system in its fight against invading bacteria, yeasts, fungi, and viruses.

Yogurt is not meant to be just a Probiotic supplement. Traditional yogurt is an immune system supporting, staple food packed with easily digestible protein, vitamins, and minerals that provide a highly energizing effect on the body.

What sets White Mountain Foods yogurt apart?

White Mountain Foods' Bulgarian Yogurt is a traditional, immune system supporting, staple food. Our yogurt is mostly known for its high probiotic count. In fact, it has one of the highest live bacteria counts compared to other yogurt products; 90 billion CFU (Culture Forming Units or live bacteria) per serving. Futhermore, the milk used in our yogurt contains no artificial growth hormones or antibiotics and comes from our local area dairy farmers. Quaility dairy coupled with our traditional fermentation process, allows most lactose intolerant consumers to comfortably digest our products. There are only 6g of lactose per one cup serving. Our Bulgarian yogurt is also versatile in the kitchen and used in many dishes from around the world. It can be eaten with granola, fruit, or your favorite sweetener. As a marinade, it will add richness to rice, lamb, chicken and beef dishes or use it as a base for low calorie dips, dressings, spreads, soups, and smoothies. Many of our customers eat it because it simply makes them feel good. Lastly, health practitioners have recommended our Bulgarian yogurt to their patients to help with digestive and feminine health, and to support their immune system.

What makes your yogurt Bulgarian?

The Bulgarians have been making and eating yogurt for millennia. Many Eastern European cultures, including Bulgarians, are descended from namads who lived on the fermented milk of their domesticated animals. The bacteria found in the Bulgarians' traditional ygort carry their name, L. Bulgaricus. This same bacterium forms the foundation of our yogurt. The use of traditional methods of inoculation, fermentation and the use of glass containers produce a yogurt virtually identical to the Bulgarian yogurt of Eastern Europe and many traditional yogurts from around the world including Asia, the Middle East, and the Mediterranean region.

Why is White Mountain Foods yogurt so tart?

The high level of bacteria present causes the tart flavor of our yogurt. Specifically, the bacteria consumes lactose in the milk and produces lactic acid; hence the mildly acidic tart flavor. Traditional yogurt is tart. Modern yogurt has become more of a pudding or ice cream like dessert with many taste and consistency additives and a low culture count. Our yogurt contains only milk and culture (live bacteria).

What are the bacteria in yogurt and what will they do for me?

The culture or live bacteria in our yogurt are Lactobacillus Acidophilus, Lactobacillus Bulgaricus, S. Thermophilus, and B. Bifidum. The digestive tract depends on several strains of bacteria to function properly. Bacteria helps break down food, making nutrients more available for absorption through the intestinal walls. Good bacteria counts are reduced as we age, consumre alcohol, antibiotics, or under go chemotherapy. Yogurt re-populates the beneficial bacteria and supports the immune system in its fight against invading micro-organisms. Healthy digestive bacteria aid the body in breaking down the food we eat making the vitamins, minerals, and proteins more readily absorbable. We recommend a minimum consumption of one cup of our yogurt a day to receive optimal benefit from these live bacteria.

Do you pasteurize your yogurt?

Our yogurt is never pasteurized. The law requires our milk to be pasteurized before the yogurt culture is added. The main consumers of milk and milk products are the very young and the very old, the two segments of the population that are the most susceptible to food born pathogens. The federal government requires pasteurization to ensure that these harmful milk bacteria are not passed on to consumers. In Texas and most other states, it is illegal to produce dairy products for sale using raw milk. All milk must be pasteurized before sale or manufacture.

What is the shelf life of your yogurt?

The yogurt comes with a "Purchase by Date" of 63 days for manufacture.

I opened a jar of your yogurt and it was runny, why is that?

We do not add thickeners such as dried milk solids or stabilizers such as gums or pectin. These ingredients are used as an aid to make a consistent yogurt, hiding yogurt that didn't form, or that has a low bacteria count. Our Nonfat yogurt is generally thinner, as there is less fat to help the yogurt set. This can happen at any time of the year and can be a result of under-incubation, handling during shipping, or temperature stored. Temperature, fat content and amount and type of culture all contribute to the consistency of our yogurt. If the yogurt is thicker than liquid milk, then it is indeed yogurt and you are receiving the benefits of live culture probiotics.

What are Probiotics?

Probiotics are dietary supplements containing beneficial bacteria or yeast, with lactic acid bacteria (LAB) as the most common microbes used. LABS have been used in healthful eating for centuries because they are able to convert sugars (including lactose) and other carbohydrates into lactic acid. This not only provides the characteristic tart and refreshing taste of fermented dairy foods such as yogurt, but also acts as a preservative by lowering the pH value and creating fewer opportunities for spoilage causing organisms to grow.

How do you know how many beneficial bacteria are in yogurt?

A commercial lab will analyze samples and report a certain number of CFU's, or Colony Forming Units per gram. Colony Forming Unit denotes active bacteria as opposed to inactive or dead bacteria. A single bacterium can divide and form a 'colony' of many bacteria.

White Mountain Foods' most recent yogurt analysis reported 400 million CFU per gram of yogurt. That is 90 billion per one cup serving.

Are your source cows treated with growth hormones or antibiotics?

As of October 1st, 2006 the milk we use for our yogurt is artificial growth hormone (rBST, rBGH) free. The co-op that supplies our milk organized its producers and banned the use of the hormone.

All milk processed in the United States is required to be tested for, among other things, antibiotics. If any antibiotics are found in the milk, the milk is destroyed.

A farmer is not born, a farmer is built. As a jack of all trades, the farmer develops many skills: a fighter, a politician, a pastor, and a mechanic. They fight for their work, they dialogue with their neighbours, they pray for good harvests, and they tire to fix broken machinery.

Tractors leaking oil, broken alley scrapers, and seized vacuum motors are easily diagnosed and will be fixed in due time—but what if it is the farmer that is feeling broken?

The farm and mental health

In 2016, a study by the University of Guelph was conducted on more than 1100 agricultural producers across Canada. The results indicated that a staggering 35% of farmers met the definition for depression and nearly 60% felt high levels of anxiety. This is no wonder considering the array of possible pressures: changes in the weather, political upheaval, portrayal in the media, etc.

The stoic bravado of the farmer centres on the idea that one should be able to bear one’s own struggles. The philosophy of the occupation has long been “suck it up and move on”. The desire to achieve and the failure to reach goals could also lead to these depressive states. Success is often limited to factors beyond human control; so a farmer might overcorrect in order to repair, and in the end, find themselves burnt-out and depressed.

They might even hear the phrase, “You’re crying over spilled milk.”

Reaching out for help isn’t always a simple matter. This stigma can affect your brand: if you are not doing well, then it is assumed that your business is not doing well either.  The survey also indicated that 40% of respondents felt uncomfortable getting professional help because of what “people might think”.

If you do not know or are unsure of the signs or symptoms of depression, it can manifest in many ways including trouble concentrating and remembering details, fatigue, irritability, loss of interest in activities, and insomnia, as well as physical aches and pains.

Community and well-being

A farmer’s heavy workload combined with a small community and isolated work can be factors contributing to depression and anxiety. When you are alone, the stress of the day can continuously brew and accumulate pressure. Alone in the barn, you are your own boss:  you are accountable to you and only you.  The loneliness can be hard.

In Australia, a study was completed by 417 respondents who suffered depression, two-thirds of whom identified that they sought care from their friends as a social or emotional support. They often cited that they felt more comfortable investing in these relationships because they felt compassion and empathy. As a farmer, you become accustomed to being alone, but interacting with your neighbours and friends is more compatible with mental wellness.

Resolve

When machinery is broken, it takes money, parts, and time to fix. When a cow is sick, it takes medicine, time, and care to restore its health. Similarly, when the heavy cloud of mental illness sets in to you or others, there is a need to invest.

If you are a farmer, you can look to those around you. If you think that you are the only one struggling, think again. A Farm Stress Hotline in Saskatchewan reported in 2011, a total of 330 calls made to the hotline, a number just shy of one call per day. Just last year, the hotline peaked at 59 calls for the month of July. As neighbours we are all in the same boat, no matter the industry.  Shane Koyczan observes that “Silence left to its own devices breeds silence.”

Tommorow, January 31 is Bell “Let’s Talk Day”; if your friends and neighbours are not talking, start the conversation. The more open you are with your friends and neighbours, the more willing they will be to share with you.

There may also be time to talk, to be upset, or get some rest, because sometimes “spilled milk” is more than that: it’s your livelihood or your job, and why you wake up every day. It doesn’t matter what it is. You don’t need permission to be upset over spilled milk.

Pastuerization vs. Raw Milk

Pastuerization is the process of heating milk in order to kill pathogens and other disease causing bacteria. The US Food and Drug Administration strongly recommends pastuerization and on a State level, Texas requires that dairy is pastuerized as legislators have decided the health risk is not worth the potential benefits.

Raw milk proponents believe that pastuerization kills the good properties in dairy and therefore milk is better in its raw and natural form. They also argue that non-pastuerized dairy only affects the very young and the very old and most people are not susceptable to these diseases, however, research shows that diseases such as salmonella are found in all ages and segments of the population. Clearly, a healthy person is less likely to become terminally ill from a disease causing pathogen but potential stomach pain and nasaua are still not really worth it to many consumers.

White Mountain Foods is all for natural and organic and we do support Non-GMO and USDA Certified Organic, however, this should be balanced with disease prevention and control. We believe that foods are best in their natural form and pastuerization does not change the consistancy while taste discrepancies are debatable and based on personal preference.   

The second argument from raw milk proponents is that there are European cheeses such as Brie and Camombert that are un-pastuerized in which people have been eating for decades. First of all, the FDA regulation is no raw milk products sold in the US with the exception of cheese that is aged for over sixty days which will work in the same fashion as pastuerization, killing off the disease causing pathogens.

Meet BC Dairy Farmers: The Gourlay Family

Meet Raymond Gourlay and his family, located in Parksville, BC. Raymond and his family are local dairy farmers and cheese-makers dedicated to producing high quality dairy products.

How old were you when you knew you wanted to be a dairy farmer?

Choosing this path was quite a process for me  - as a kid I was pretty sure I didn’t want to farm. I went to university to study Christian Ministry but while I was there I worked on a dairy farm and started reconnecting with the industry. In my early 20s I began realizing my passion for agriculture, the local food industry and all the values of living on a farm, working in a family business, etc. My young family and I recently moved back onto the family farm and it’s a dream come true!

What do you love most about being a dairy farmer? Why?

Especially now that I have a son of my own, it doesn’t get any better than working on a family farm and being nearby for him all day. I love contributing to an industry I really believe in and working with family and a great team of employees. In our business, Little Qualicum Cheeseworks, we have the privilege of not only producing milk but turning it into cheese. Having so many different aspects to our operation definitely keeps the work exciting. Artisan cheese is really something that brings people together – our customers buy it for special occasions and to share with loved ones. I count it a privilege to create a product that not only sustains people but fosters those kinds of social connections.

What is the biggest challenge in dairy farming today?

The challenge that comes to mind immediately is the general public’s increased concern and the level of scrutiny applied to the dairy industry today. We feel it acutely as a farm that is open to the public, for free, on a daily basis. People want to know where their food comes from and how it is produced. That challenge is also our biggest opportunity though – we go to great lengths to create a farm that is a welcoming atmosphere to the public and is a genuine and transparent demonstration of modern dairy practices. We’re proud of our farm and our industry and thankful for the ongoing opportunity to show it off.

What’s one thing you wish you could tell consumers about dairy farming?

Happy cows make great milk. For all kinds of reasons, dairy farmers are always looking for ways to make their cows healthier, happier, and to reduce stress in the whole herd. We take animal welfare and milk quality seriously. We believe in our product and our industry and we’re proud of its contribution to our country as a whole.

How many hired staff do you have (part/full time)?

Given that we have a complex cheese-making operation and a tourism destination we have about 15 year-round staff with an additional 8 during the high season.

What family members are involved with your operation, and what are their responsibilities?

My grandparents are great brand advocates in grocery stores and at farmers markets; my Dad is our general manager; my Mom is our cheese plant manager (and president); my brother John is a herdsman, and brother Kevin is in university but working hard on the farm all summer; my wife just graduated from university and goes to markets periodically; and I work in cheese-making, marketing, and sales. It’s a family affair!

What is your primary breed? If it is other than Holstein, why did you choose this breed?

Most of our cows are Holstein but we’ve cross-bred to breeds like Brown Swiss, Guernsey, and Canadienne over the years, so there’s quite a bit of colour in our herd. I’d say there was a grand strategy but the cross-breeding is mostly just for fun!

Are you primarily dairy focused? Do you have any other animals, or are you involved in any other type of agriculture?

We first and foremost are a dairy farm, but my Mom has a thing for horses and our visitors love to see other animals so we keep a collection of animals like miniature donkeys, sheep, goats, rabbits, guinea hens, and more… all “lawn ornaments” as we call them!

What’s your favourite dairy product?

It’s got to be cheese. I always gravitate to the firm alpine-style cheeses made with raw milk – the kinds that have that thick rind and strong smell. We make two Swiss inspired cheeses: Raclette and Rathtrevor (Gruyere) and I could pretty much stick with them for life. I’m also crazy about this super rare Central-Asian beverage called Ayran; it’s a thin yogurt drink but instead of being sweetened it’s flavoured with salt. It sounds odd to our palette but it’s the most refreshing drink I’ve tasted!

Are your kids interested in continuing the family business? If not, what do they “want to be when they grow up”?

We’re at that point now where we’re the kids! We’re excited to continue taking on more responsibility on our farm and ultimately, continue to grow it into a business and a lifestyle that is attractive to our own kids when they grow up.

White Mountain's View on Non-GMO

White Mountain Foods does not support the use of GMO (genetically modified organism) in our food supply.  We believe the current government regulations do not go far enough in protecting the consumer from profit mongering corporations prematurely marketing altered organisms and food additives without long term, peer reviewed studies, that prove without a doubt no harm will be done to our health. 

Our policy is to use NON-GMO ingredients whenever possible.  Not all crops have a GMO version…wheat for example.  The crops that we use that have GMO versions…soybeans, corn, canola oil, sugar cane (molasses) and alfalfa (cattle feed)…have been around long enough to have spread (through cross-pollination) their GMO genetic material to all varieties (except alfalfa)…GMO and NON-GMO alike.  It is now impossible to find 100% NON-GMO varieties of these items grown in the USA and many countries abroad.  All other crops have non-GMO versions so contain no GMO's.

Also, whereas there are tests that will show the GMO content of crops, there are no such tests that work on animal products.  The National Organic Standards include a NON-GMO requirement for food and feed crops labeled organic. 

Due to the lack of leadership from the governmental regulatory bodies, several independent organizations have set up their own NON-GMO standards (% threshold of GMOs to be considered NON-GMO) in order to educate the public and provide some standards by which food products can be graded for those wishing to avoid GMOs as much as possible.

We have enrolled our products in the NON-GMO Project http://www.nongmoproject.org/ and are working towards NON-GMO certification.

Are there antibiotics and growth hormones in Canadian milk?

No. 100% No. Canadian milk does not contain artificial growth hormones or antibiotics.

Maybe you’re hedging your bets and substituting alternative beverages on occasion. Well, you might be relieved to know that

  • They always ensure their milk is free of antibiotics.

While the administration of growth hormones (known as rBST or rBGH) is allowed in US dairy livestock, it is illegal in Canada and therefore not permitted for use with any dairy cows.

Antibiotics

As for antibiotics, BC has some of the highest standards for milk production in the world with zero tolerance for antibiotic residue in both organic and conventionally produced milk. Farmers continually monitor their cows’ health in order to ensure their well-being. Cows need to be healthy and content in order to produce optimal amounts of high quality milk. When cows are sick and require antibiotic treatment, the milk they produce is discarded for a regulated period of time to ensure the milk collected at the farm is free of antibiotic residue.  

Antibiotic Testing

Every, and we mean every, truckload of milk is tested before being unloaded at the processing plant. Milk samples are taken at every farm. If the sample contains antibiotics (because let’s face it no one is 100% perfect all the time), then the entire load is discarded and the farmer who contaminated the load is heavily penalized. 

So, what kind of growth hormones and antibiotics are in milk?

NONE. Canadian milk has no artificial growth hormones and antibiotics. It is also nutritious—and chock-full of vitamins and minerals.
