Birds and Beans Squash Soup Recipe
Ingredients:
You can purchase all of the ingredients at the Comox Valley Farmers’ Market!
Winter Squash
You can use many different types of squash! Each one has a slightly different flavour/texture, but all make delicious soup – so come out to the market and pick your local farmer’s knowledge of the ins and outs of winter squash!
Stock
Turkey or chicken are my favourite, but beef or pork would do, just with a beefier flavour.
Onions, garlic, carrots, celery, potatoes
We like Seiglinde potatoes the best!
Greens
Kale, and/or Mizuna, and/or Arugula, and/or Parlsey, etc.
Tree Island Yogurt
We like greek style
  1. Roast the squash (see note below). For convenience, the squash can be roasted the morning or the night before and put in the fridge until you’re ready to make soup.
  2. Chop up onions, garlic, carrots, and celery. Fry them in a bit of butter or oil. Cook until soft.
  3. Meanwhile chop up potatoes into soup-size chunks, and either scoop out the pre-roasted squash or peel and chop up the squash into similar-sized chunks as the potatoes.
  4. Once the onions and garlic are cooked, add the stock, potatoes, and squash. Bring to a simmer until cooked. Salt to taste.
  5. The soup can either be blended or not, or somewhere in between. Use a stick blender and do it in the pot.
  6. While the soup is cooking, chop up your preferred greens. Include the stems. They are often incredibly sweet in the fall and winter. Place chopped greens either in bowls so that people can choose how much to put in their soup, or put them in the pot right before serving. If you intend on having leftovers, I find the greens lose their appeal and go mushy, so serving them separately from the large pot means you can have fresh greens the next day.
  7. Immediately before serving, finish each bowl with a nice large dollop of Tree Island Yogurt – Voila!


Note: I prefer roasting the squash, which eliminates peeling as you just scoop out the insides. But if you don’t have time to roast you can always peel the squash, chop it up, and put into the soup raw. It will take a little longer to cook if it hasn’t been roasted.

To roast a squash chop it in half, remove the seeds, and put it face-down in a pan with a little bit of water in pan to keep moist. Bake at 350 degrees for about 45 minutes or until you can poke a knife through it.

It’s delicious, healthy, made from hemp. What’s not to love?
Ann Milligan is the owner of the Cumberland Hemp Company. Traditionally associated with the fibrous by-product of high test “weed,” hemp is coming into it’s own. And Ann sees a bright future for it here in the Comox Valley. Not only is the plant a source for durable fibre, used in rope as well as clothing, it’s a food source. In fact, Ann is starting her hemp enterprise with “Hempscream.”


Hemp at Heart
Hempscream is a frozen dessert made from “hemp hearts,” the protein-rich heart of the hemp seed. Ann has paired hemp hearts with creamed coconut to make an “ambrosia.” This ambrosia forms the base. She then adds chocolate, maple, and coffee flavours. Watch for local seasonal fruits in this summer’s Hempscream!
 
Canada is currently experiencing an edible hemp revolution, Ann says, and adds that shelled hemp seed is high in healthy fats, minerals like iron and manganese, and is a great source of energy among other naturally occurring benefits. “The hearts are a cereal grain type of food,” and they’re already available in many grocery stores across the country.

Harvey and Jesus Miller launched Abuelo's Corn Tortilla's at the Comox Valley Farmers' Market seven years ago. For a couple of years they also ran a restaurant in downtown Courtenay. Eventually, they got so busy selling tortillas, tortilla chips, various salsas, chimichurri sauce, and salsa verde that they sold the restaurant.

Today, you can Abuelo's products in Vancouver, Victoria, as well as almost 30 outlets on Vancouver Island. You'll find their product in 14 resaurants in the Comox Valley, Campbell River, and Ladysmith. You'll also find Harvey and Jesus at the market, indoors and outdoors, 12 months of they year.

Thanksgiving is on the horizon

Do you know where your turkey is? 

Comox Valley Farmers' Market is a great place to get fresh, healthy, local produce - including turkey. One of the farms to check out is Victorian Acres. David and Sandy Todd have been farming naturally-raised "happy" turkeys, chickens, and beef for 20 years. 

It started with the dream of having a country home. "We'd been living in town and decided to build in the country," Sandy says. At first it was few birds, a few cattle. Now they're up to 1600 turkeys a year: 800 for Thanksgiving, 800 for Christmas.

Victorian Acres and the Comox Valley Farmers' Market

Today the market accounts for about 90% of Victorian Acres Farm business. But it was a bit of a crisis that brought them there. "Three years ago we had a big Thanksgiving hotel order fall through,"  Sandy explains. "All of a sudden we had a lot of turkeys to deal with. The market saved the day for us."

Victorian Acres Farm still sells whole birds, but they've added turkey sausage, wings, breasts, and ground turkey to the mix. Adding value to their product has been good for the bottom line. "The market is great. And it's a lot of fun at the market!"

Ceylon Cuisine launches Canada's first Sri Lankan Food Truck at the Comox Valley Farmers' Market!

Manoja Gangodage is a food entrepreneur with a mission: to introduce Vancouver Island to the flavours of Sri Lanka, one of the original "spice islands." That mission was the result of arriving in a place with no knowledge of Sri Lanka's culinary riches. "I couldn't find any Sri Lankan restaurants, in the Comox Valley or on Vancouver Island," she says. The result: Ceylon Cuisine and Spice, selling frozen dinners and a special blend of 14 spices.

It's not about overwhelmingly strong flavours, what is often associated with the word "curry."  The Ceylon Cuisine approach is about subtlety. It's about applying the culinary tradition of Manoja's birthplace to the fresh produce of her new island home. This allows the local flavours to shine in a new way.

From take-home frozen to take-out food truck

Inspired by the reception of their take-home frozen dinners, Manoja and Sudeera decided to step things up. At the beginning of June they launched Ceylon Express, the first Sri Lankan food truck in Canada – at the Comox Valley Farmers' Market! "Now we can serve you frozen curries to go, we can sell you our unique curry blend, and we can serve you hot food as well."

"Our first day at the market was very exciting! It seemed that the whole of the Comox Valley was also excited for us. We had great response," she says. Watch for Ceylon Express in other locations this summer. They're anticipating that, with Comox approval, they'll be at the Marina three days a week.

For Manoja, the market  "was the greatest thing that happened to us. We were so inspired." She says other vendors were very welcoming of their novel approach to fresh and local. As well, vendors have been a source of constant business support and advice. Perhaps most important, the market allows Ceylon Cuisine to connect to local farm fresh product directly. "It's something we look forward to every week."
